(TAHINI AND WHITE CHOCOLATE SPREAD, Scroll down for the recipe in English) J’aime beaucoup utiliser le tahini en cuisine. Ce beurre de sésame typique du Moyen-Orient, du Maghreb, de la Grèce et de la Turquie rehausse tous les plats et les sauces (vinaigrettes, dips, hummous, sauces pour les wraps) par son intense parfum de sésame et son extrême onctuosité. J’avais envie de l’utiliser dans une recette sucrée pour changer un peu, et cette tartinade est vraiment un coup de coeur! Après quelques essais, j’ai trouvé l’équilibre parfait entre la douceur vanillée du chocolat blanc et l’amertume du tahini, avec comme résultat une crème à tartiner veloutée, bien goûteuse et pas trop sucrée. Cette recette est en quelque sorte la version choco blanc – sésame de mon Nutella maison...
Contenant une généreuse quantité de tahini et sucrée uniquement par le chocolat blanc, cette crème a définitivement une belle amertume et un bon goût de sésame… Vous trouverez du tahini un peu partout (supermarchés, épiceries fines, épiceries orientales ou boutiques de produits naturels). Celui de la marque Nuts to you (ci-dessous) n’a pas une texture parfaitement lisse, et me plaît bien par son côté rustique. Si vous désirez un produit parfaitement lisse, optez pour la marque Clic…
Ce mélange inusité de saveurs est parfait sur les toasts du matin… Vraiment délicieux avec un café!
Il sera aussi un parfait substitut aux ganaches, crèmes au beurre et glaçages sur les gâteaux… Imaginez un gâteau au miel ou à la fleur d’oranger avec ceci comme glaçage…
Pour les amateurs de halva, cette confiserie turque à base de sésame, je vous recommande fortement d’ajouter une bonne poignée de pistaches grillées et hachées à la crème… Le résultat sera un véritable halva tartinable. Miam!
Crème de tahini et chocolat blanc à tartiner
INGREDIENTS (pour environ 650 g – 2 1/2 tasses)
150 ml de crème 35% à cuisson
100 ml de lait évaporé non-sucré type Carnation
150 g de chocolat blanc
250 g de tahini
1/2 tasse de pistaches grillées et hachées (optionnel)
Chauffer la crème et le lait évaporé au micro-ondes jusqu’à ce que liquide soit très chaud. Y déposer le chocolat blanc en morceaux, et laisser reposer environ 1 minute, avant de brasser, pour le laisser fondre. Ajouter le tahini et les pistaches (optionnel) bien mélanger, et mettre en pot. Laisser refroidir complètement, pour que la crème durcisse, avant de déguster.

White chocolate’s sweet vanilla flavour is amazingly delicious when combined with tahini’s bitter sesame taste. I am really happy about this recipe! This spread is perfect for your morning toasts and would be a wonderful substitute to a ganache, icing or buttercream on any cake. Could you imagine a honey or orange blossom flavoured cake with this on top? Yummy 🙂
Halva lovers will enjoy the addition of chopped pistachios to the spread… These will turn this into a spreadable halva!
I think I should bring this to Fiesta Friday # 22… After all, people might sleep over and this spread would be perfect for breakfast! It is so amazing on a crispy bread, with a nice cup of coffee!
Tahini and white chocolate spread
INGREDIENTS (for about 650 g – 2 1/2 cups)
150 ml (5 oz) heavy (35%) cooking cream
100 ml (3 1/3 oz) unsweetened evaporated milk
150 g (5 oz) white chocolate
250 g (8 oz) tahini
1/2 cups roasted and chopped pistachios (optional)
Microwave the cream and milk until very hot. Add the white chocolat and put aside for 1 minute, until completely melted, before mixing it in. Add in the tahini and chopped pistachios (optional). Pour into clean glass containers and refrigerate. Wait until cooled and firm before eating. Bon appétit!

Their are delicious together! I had tasted sweetened tahini and sesame seeds before (with honey, caramel, in halva) so I thought why not with white chocolate? This is like a middle eastern white Nutella 😉
